Gluten Free Zucchini Bread

Preheat oven to 350°F. Coat two 8×4 inch pans with cooking spray. In large bowl, mix oil, sugar, eggs, applesauce, vanilla together with electric mixer until it is smooth. Add flour, baking powder, xanthan gum, salt, cloves. Mix on medium until thoroughly combined. Quickly stir in zucchini, nuts, raisins. Turn batter into baking pans and bake 60-65 minutes. Place foil on bread for last 20 minutes.

INGREDIENTS: 1/3 cup vegetable oil • 2 large eggs • 1 tsp. vanilla extract • 2½ tsp. baking powder • 1½ tsp. xanthan gum • 1/2 tsp. ground clove • 1/2 chopped pecans or walnuts • 1 cup brown sugar • 1/2 cup applesauce • 2 cups white rice flour • 2 tsp. ground cinnamon • 3/4 tsp. sea salt • 2 cups finely grated zucchini • 1/4 cup raisins
