Recipe Ingredients:

  • 2 Marbled Rye Bread Slices
  • 2 Swiss Cheese slices
  • 2 oz. Thousand Island dressing (optional – Tavern Mustard)
  • 2 oz. Fresh Sauerkraut
  • 4 oz. Corned Beef

Recipe Instructions:

Corned Beef Preparation:

In a deep pan, place the Corned Beef flats with 1 cup of Au Jus. Cover tightly with plastic film and foil, and cook at 350 degrees for 4-6 hours (time depends on thickness and how tender you desire of meat). Uncover and allow to cool. When cool enough to handle, carefully scrape off fatty layers with spices. Separate muscles and remove extra fat layer between muscles. Slice against the grain ½” to ¾”. Place in shallow storage container into refrigerator

Set the stove for medium heat for two burners and with two pans. On the first pan, heat up the Corned Beef until steaming. Keep cooking meat for crispier Corned Beef. In a buttered hot pan, grill the Marbled Rye. Place Swiss cheese slices on both pieces and top with Thousand Island dressing (or Tavern Mustard, optional), followed by Sauerkraut. Ensure cheese has begun melting before placing Corned Beef in-between Rye slices. Cut in half and enjoy! *Makes 1 sandwich.
