Recipe Ingredients:

  • 1 ounce chopped semisweet chocolate
  • 1 pint Snoqualmie© Mukilteo Mudd Chocolate Ice Cream
  • 1 tbsp cornstarch
  • 2 tbsp cocoa powder
  • 1 cup milk
  • Pinch of salt
  • ½ tsp vanilla extract
  • 1 cup sugar
  • ½ tbsp unsalted butter

Recipe Instructions:

1. In a medium saucepan, melt the chocolate. Whisk in the sugar, cornstarch, cocoa, milk, and salt until smooth. Continue cooking until the mixture thickens, about 5-10 minutes.
2. Remove from heat and stir in the vanilla and butter until completely smooth. Let the mixture cool slightly and add in 2 large scoops of the Mukilteo Mudd Ice Cream. Mix again until smooth.
3. Pour into lightly greased popsicle molds and add sticks. Freeze until firm, at least 4 hours or overnight.
