- 1 ounce chopped semisweet chocolate
- 1 pint Snoqualmie© Mukilteo Mudd Chocolate Ice Cream
- 1 tbsp cornstarch
- 2 tbsp cocoa powder
- 1 cup milk
- Pinch of salt
- ½ tsp vanilla extract
- 1 cup sugar
- ½ tbsp unsalted butter
Recipe Instructions:1. In a medium saucepan, melt the chocolate. Whisk in the sugar, cornstarch, cocoa, milk, and salt until smooth. Continue cooking until the mixture thickens, about 5-10 minutes.
2. Remove from heat and stir in the vanilla and butter until completely smooth. Let the mixture cool slightly and add in 2 large scoops of the Mukilteo Mudd Ice Cream. Mix again until smooth.
3. Pour into lightly greased popsicle molds and add sticks. Freeze until firm, at least 4 hours or overnight.
