Instant Refried Beans

Place 1½ cups instant refried beans in a bowl. Add 2 cups boiling water. Stir well. Cover 5 minutes and serve. Variation; for a richer flavor, add 1 or 2 tablespoons butter to beans before adding boiling water, stir to dissolve.

Calico Bean Soup

In large pot combine yellow split peas, green split peas, limas, pinto beans, kidney beans, Great Northern beans, onion, bouillon granules, cumin, garlic powder. Add water and bring to a rolling boil. Cover, remove from heat, and let sit 1 hour. Return pot to heat, stir in carrots and celery. Stir in ham hocks, bring to a boil. Cover, reduce heat and simmer 2 hours.

Wash and sort for any foreign material from dry beans. Either soak the beans overnight (or for 8 hours) in water (3 cups of water for 1 cup of beans); or about 2½ hours before serving time, cover the beans with hot water and bring to a rapid boil. Beanland Soup Mix

Wash and sort for any foreign material from soup mix. Add water and soup mix (3 cups for 1 cup of soup mix) into a large stockpot. Add vegetables, seasonings and meat if desired, bring to a full boil. Reduce heat and simmer for 45-60 minutes (or desired consistency).

Quinoa With Oyster Mushroom & Adzuki Beans

Crush the oyster mushrooms slightly and remove the tough stems. Saute carrots, onions and mushrooms for 3 minutes. Add broth, beans and quinoa. Season to taste with salt and pepper. Bring to a boil. Reduce heat to low and simmer for 15-20 minutes or until all liquid is absorbed. Fluff with a fork and serve. Serves 4-6.
