Heart Smart Banana Bread

1 1/3 cups mashed very ripe bananas (about 2 large)
2/3 cup sugar
3/4 cup fat-free egg product
1/4 cup fat-free (skim) milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla
3 cups Bisquick Heart Smart® mix

INSTRUCTIONS:
1. Heat oven to 350°F. Spray bottom only of 9×5-inch loaf pan with cooking spray. In large bowl, stir bananas, sugar, egg product, milk, oil and vanilla until blended. Stir in Bisquick mix. Pour into pan.

Cream butter and sugar until light and fluffy. Add egg, molasses, beat well. Sift flour and measure, and sift again with soda and spices. Add alternately with buttermilk to creamed mixture. Pour into greased 8 or 9 inch square pan. Bake in 350° oven for 30 minutes.

Whole Grain Spelt Bread For Bread Machine

Place ingredients in pan of bread machine according to manufacturer’s instructions. Select basic/white (light crust) cycle and bake. After baking is complete remove from bread machine. Invert bread pan and cool loaf on wire rack before slicing. Yields: 1½ lb. loaf, 13 slices.

In saucepan combine dates, sugar, nuts, lemon juice and water. Cook over low heat, stirring until thick, about 5 minutes. Remove from heat, cool. Stir in vanilla. Cream butter, brown sugar; stir in oats, cinnamon and allspice. Press 1/2 oat mixture into greased and floured 9 x 9 pan. Spread with date mixture. Sprinkle with remaining oat mixture. Whisk together flour, baking soda, salt, cinnamon, and baking powder. In a large bowl, beat the eggs. Gradually beat in sugar, then oil. Dissolve yeast in 1/2 cup warm water. Cream butter and honey to a fine stream. Add eggs, one at a time and beat. Add yeast mixture. Add flour and salt. Let rise until double. Knead then rest 3 minutes. For rolls – let rise and bake at 350° for 15 to 20 minutes.

Gluten Free Zucchini Bread

Preheat oven to 350°F. Coat two 8×4 inch pans with cooking spray. In large bowl, mix oil, sugar, eggs, applesauce, vanilla together with electric mixer until it is smooth. Preheat oven to 400°F. Lightly grease an 8×8 inch baking pan. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in yogurt and eggs. Do not over mix, stir only until well blended. Preheat oven to 325°F. Cream softened butter throughly. (If using margarine, add four drops of butter flavoring) Slowly add sugar. Sift flour and corn starch before adding. Mix well. Melt butter, honey, cinnamon, and orange peel. Stir until well blended. Add Pecans and cook over medium heat until pecans are glazed, stirring constantly. Put biscuits on baking sheet and flatten slightly. Spoon pecan mixture over biscuits. Bake as directed on package.
