3 tablespoons olive oil
1 cup chopped onion
2 tablespoons chopped shallots
1/2 cup chopped red bell pepper
2 cups Vigo Imported Italian Arborio Rice (look for bright yellow standup bag)
6 cups chicken stock
6 ounces chopped Fontina cheese

Uncovered Pan: Bring a large pan of water to a rolling boil, add rice and salt, stir. Return to a medium boil and cook uncovered for 10 minutes. Drain and rinse with more boiling water.

Saute onion in hot oil until golden brown. Add rice, heat thoroughly, stirring often. Stir in beaten eggs, pepper, flavor base and soy sauce. Saute 3 minutes. Continue to stir. Add meat and heat until mixture is steaming hot. Serves 6.

Wild Rice Stuffing

Wash rice; soak 1 hour in warm water to cover. Place with 2 cups boiling water, flavor base in top of double boiler. Cook covered 2 hours. Saute celery and onion in butter, then combine all ingredients and mix well. Makes enough to stuff a 10 lb. bird.

Jazzy Green Bean Casserole

Preheat oven to 350°F. In a large bowl combine green beans, corn, mushroom soup, onion flakes, cheese, salt, pepper and garlic powder. Transfer to a 2 quart casserole dish. Bake in preheated oven for 30 minutes, or until bubbly. Sprinkle fried onions on top and bake for a few minutes more, until onions brown.

Wild Rice Pilaf

2½ parts water or broth to 1 part Pilaf Blend. Bring liquid to a boil, add rice blend, cook for 35-40 minutes.

Sausage & Wild Rice Casserole

Crumble sausage and brown in large skillet. Add pepper flakes and celery and continue cooking until celery is soft. Drain off excess fat. Drain and chop pimento, add to sausage mixture, along with remaining ingredients. Mix well. Pour into 3 quart casserole, cover, bake in 325° oven 11/2 hours, or until rice is tender and dry. Chicken And Rice

Spread rice on bottom of buttered glass dish and add chicken broth. Place pieces of chicken on top; sprinkle with onion soup mix. Spread with creamed soup; sprinkle with paprika. Bake uncovered, at 325° for 1 hour and 30 minutes. Cover and bake for 30 minutes.
