Easy Italian White Bean Soup

2 teaspoons olive or vegetable oil

Split Pea Soup

Soak split peas in water overnight, then add ham bone, onion, celery, carrots, parsley. Heat to boiling, cover. Simmer 4 – 5 hours until peas are tender and liquid is partially cooked down. Season to taste with salt and pepper. Makes 8 servings.

Calico Bean Soup

In large pot combine yellow split peas, green split peas, limas, pinto beans, kidney beans, Great Northern beans, onion, bouillon granules, cumin, garlic powder. Add water and bring to a rolling boil. Cover, remove from heat, and let sit 1 hour. Return pot to heat, stir in carrots and celery. Stir in ham hocks, bring to a boil. Tortilla Soup

Stove Top Directions: In medium sized pan, add 1 2/3 cups of water to 1 cup of mix and heat. Once boiling, reduce heat and cook for 3 minutes, stirring occasionally.

Microwave Directions: Add 1 2/3 cups of water and 1 cup of soup mix in a medium microwave pan and heat on high for 3 minutes. Makes 2 servings.

Sort and wash peas; place in a large Dutch oven. Cover with water 2 inches above peas; let soak 8 hours. Drain. Add 6 cups water and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 1½ hours. Yield: 6 cups.

Bean Soup

Cover beans with water and salt; soak overnight. Next day drain, add 2 quarts water and ham hocks; simmer 3 hours. Add onion, tomatoes, chili powder, garlic, salt and pepper. Simmer another hour. Add red wine and parsley. Serves 10.

Bean Pot Limas

Soak beans in 6 cups water overnight. Simmer about 30 minutes. Drain, reserving liquid. Combine all ingredients. Pour into 2 quart casserole. Cover and bake in 300° oven for 21/2 hours. Uncover for last 30 minutes of baking time.

Vegetable Blend Soup Mix

Can add to any homemade soup recipe. Also can be used in stuffing of chicken or turkey for a little color.

Rinse mix, no soaking necessary. Add 1 cup mix to 2 cups water or 1 lb. mix to 42/3 cups water. Bring to a boil, reduce heat. Cover tightly, simmer 45 – 50 minutes

In a 5 quart slow cooker, combine the peas, water, sausage, bouillon, carrot, celery, potatoes, garlic powder, oregano, bay leaves, and onion. Cover, and cook on High setting for 4 to 5 hours. Remove bay leaves before lading into bowls. Note: If you do not have a slow cooker, combine all ingredients in a large pot and simmer over low heat for 2 to 3 hours, stirring often.
