Bulk Foods Recipe: Bin #1661 - YELLOW POPCORN
- 8 cups yellow popcorn, popped
- 1 1/3 cups sugar
- 1 cup pecan halves (Bulk Bin #2029)
- 1 cup whole almonds (Bulk Bin #2037)
- 1 cup butter
- 1/2 cup light corn syrup
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
Recipe Instructions:Preheat oven to 250°F
In a large bowl, combine popcorn, almonds and pecans. Set aside.
In a saucepan, combine sugar, corn syrup and butter. Bring to boil over medium heat, stirring constantly. Continue boiling until mixture turns caramel color, about 260°F.
Remove from heat and stir in vanilla; then add baking soda (mixture will foam up), pour syrup over popcorn and nuts; stir immediately and continue until all popcorn is evenly coated.
Place on shallow, buttered cookie sheet; bake for about one hour.
Cool completely. Break into pieces, if necessary.
Store in airtight containers for up to 2 weeks.
