- 4 (6 oz.) cod fillets
- 1 cup panko
- 4 tablespoons lemon juice
- 3 tablespoons dijon-style mustard
- 1 tablespoon parsley, finely chopped
- 1 1/2 teaspoons lemon zest
- 1/4 teaspoon salt, or to taste
- Non-stick cooking oil spray
Recipe Instructions:Preheat oven to 375°F
Line bottom of baking dish with foil.
Rinse cod fillet and pat dry with paper towels.
Combine panko, lemon zest and parsley in shallow dish. Mix well.
Use mustard to evenly coat tops of fillets. Coat each fillet with the panko mixture. Lay fillets in baking dish about 1/2 inch apart. Use nonstick cooking oil spray to lightly coat fillets' crumb topping.
Bake for about 12 minutes or until fish is cooked through. Broil fillets for 1-2 minutes, or until crumbs are nicely browned.
Spoon 1 Tablespoon lemon juice across individual plates, lay fillet on top of juice and serve.
